Every morning I enjoy a deliciously nutritious smoothie for breakfast that takes about 5 minutes to prepare, blend, and serve.
- 2 ripe bananas (medium to large size, preferably / 3-4 bananas if small)
- 8 oz. organic frozen blueberries
- fresh coconut (amount varies according to your taste – I like more; if you don’t have fresh coconut use unsweetened, unsulphured coconut flakes)
- almond milk (fill to the height of the fruit in the blender)
Blend for 1 to 2 minutes at high speed setting to thoroughly blend coconut and avoid choking.
This blueberry-banana-coconut concoction is my favorite, hands down. It’s creamy, not too sweet, and a great energizer for the morning.
